I’m half Scottish, half English, was born in Germany, studied Arabic at university, then came to Vienna and fell into bartending. As a Tapster, I have taken my quality of service up a notch. It has also given me more confidence and belief. I now have an incredible connection to Pilsner Urquell – I’m a true advocate. Austria has a strong beer culture – but they tend to be loyal to local brands. Foreign brands have to work harder to gain their trust. You need an authentic story behind it to get a connection, especially in this five-second social media age. Wet foam to me is like the foam on a good coffee. It could be the new beer trend.

If you were a beer, what beer would you be?

I’d be an IPA. It’s traditionally British but was sent abroad. At first you think it’s bland but it becomes fruity and fizzy at the end!
